Easy Vegan Recipe - Roasted Cauliflower

Cheesy, spicy, low calorie goodness with a deliciously sweet roasted flavor, this vegan roasted cauliflower dish is sure to be a favorite side dish for family dinner or on the go snacks. It's also ridiculously high in potassium, vitamin C, and B vitamins.

What You Need
  • 1 large head cauliflower
  • ½ cup nutritional yeast flakes
  • ½ teaspoon sea salt
  • 1 teaspoon cayenne pepper
  • 2 Tablespoons olive oil
How to Do It
  1. Spread oil around on baking sheet and set aside.
  2. Start preheating oven to 400 degrees.
  3. Place seasonings into a large Zip-lock type bag.
  4. Wash cauliflower and break apart into florets no larger than 1-1/2 inches across.Try to make them as uniform as possible. With a knife remove any thick core stems.
  5. Put cauliflower into plastic bag and shake well. Rub around to make sure each piece of cauliflower is coated with seasoning mix.
  6. Remove seasoned cauliflower from plastic bag and place on oiled baking tray.
  7. Bake at 400 degrees for 15-18 minutes, or until edges are a golden brown.
  8. Serve hot for best flavor.
