French toast doesn't have to be out of your life just because you're a vegan. Try this totally plant-based version and see how you like it. This recipe serves two - double or triple it for a family.

What You Need
1 cup of soy or homemade almond milk (for a richer flavor, use half soy cream and half soy milk)
2 Tablespoons unbleached flour
2 Tablespoons nutritional yeast flakes
1 teaspoon Agave nectar
1 teaspoon ground cinnamon
day-old or older slices of bread, cut in half
100% pure maple syrup
fresh fruit (optional)
How to Do It
In a large bowl, mix together soy milk/cream and all the other ingredients.
Heat 1 Tablespoon of cooking oil in a non-stick frying pan.
Dip slices of bread (halved) into the mixture and fry until golden brown.
Flip french toast over and brown the second side.
Place cooked slices in warm oven until all mix is used.
Serve french toast with maple syrup and/or slices of fresh fruit.
