Red Onion and Garlic Salad Dressing

A tasty blend of savory, sweet, spiciness and tartness in a beautifully colored, easy to make dressing sure to add zip to your favorite salads. If you can find the sweet red Spanish onions, they'll give the best results. Substitute Vidalia or other mild yellow or white onion if red onions are not available in your area.

What You Need
  • 1 clove fresh garlic, mashed
  • 1 small red onion, peeled and quartered
  • ⅓ cup beet sugar
  • ½ to 1 teaspoon Kosher salt (to taste)
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon celery seeds
  • 1 Tablespoon quality Dijon mustard
  • ⅓ cup white wine vinegar
  • 6 oz. avocado or olive oil
How to Do It
  1. Put all ingredients into blender or food processor and blend until smooth.
  2. Pour into salad dressing cruet for immediate serving, or store in an airtight jar or plastic container.
  3. Lasts 3-5 days in the refrigerator.
