What You Need
  • 6 cups greens (combination of arugula, baby kale, baby spinach, or spring mix)
  • 1 red apple
  • 1 green apple
  • 1 cup walnuts, roughly chopped
  • ⅓ cup crumbled vegan feta cheese
  • ⅓ cup dried cranberries
Salad Dressing Option #1
  • 1 cup apple juice
  • 4 tablespoons raw apple cider vinegar
  • 2 Tablespoons raw Blue agave nectar
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon fresh ground black pepper (or to taste)
  • ¼ cup oil
Salad Dressing Option #2
  • ½ cup unsweetened almond milk
  • ¾ to 1 cup vegan mayonnaise (adjust for desired thickness)
  • ⅓ cup coconut sugar (or granulated sugar); adjust amount to taste
  • 2 Tablespoons white wine or Balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 to 2 Tablespoons poppy seeds (to taste)
How to Do It
  1. Core and chop apples (thin slices or ½" chunks).
  2. Toss lettuce, apples, walnuts, vegan feta, and cranberries together in a large bowl.
  3. Whisk together all dressing ingredients.
  4. Toss with salad immediately before serving. Enjoy!
For Dressings
  1. Add all ingredients to blender in order shown (to prevent unnecessary sticking of ingredients to bottoms and sides of blender).
  2. Blend on high for about 45 seconds or so until fully blended.
