Baby Bok Choy and Tofu in Vegan Sweet and Tangy Sauce
Baby bok choy, tofu and a variety of Asian sauces come together to create a wonderful entree high in potassium, vitamin A, vitamin C, and calcium. Might not look that spectacular, and it’s definitely not fru fru or anything like that– but the taste. OMG! Finger lickin good, and a perfect blend of sweet, tart, and spicy. I was a total piggy and ate it all by myself (over two days but still).
