BGVebruary Challenge Menu Ideas for Breakfast, Lunch and Dinner

Since meat and dairy free eating is a new thing for most of the participants in the BGVebruary 28 Day Vegan Challenge, we thought it would be a good idea to make sure you succeed. One of the most challenging aspects of changing your diet is figuring out what to eat instead of the things you’re used to eating.

One good thing to mention is that many of the foods you’re already eating are vegan; they may, however, require an adjustment in how you prepare them.

For example, instead of seasoning your pot of greens or cabbage with smoked meats, you can instead used smoked paprika, smoked salt, and/or liquid smoke, along with organic vegetable broth and seasonings. You’ll get the same delicious flavor without animal products.

But don’t worry, below are dozens of menu ideas for meals, snacks and desserts that you can use during the 28 Day Vegan Challenge. We’ve linked to some great and easy to prepare recipes on this and other vegan blogs for convenience, and invite you to utilize cookbooks such as Why Vegan is the New Black: More than 100 Delicious Meat and Dairy Free Meal Ideas Your Whole Family Will Love, Vegan Soul Kitchen: Fresh, Healthy, and Creative African-American Cuisine or The Vegan Soulfood Guide to the Galaxy.
