Lentils should be a part of your regular meal rotation if you suffer from hypertension (as most African Americans do), or iron deficient anemia. Why? A one-cup serving of lentils contains 731 mg of potassium, along with 16 gms of dietary fiber, and 18 grams of protein.  Fiber is important to keep you regular, make you feel fuller longer, and stave off digestive problems. This is a wonderful tasting soup with a bit of a kick, a bit of tart, and a lot of flavor.
