Rolled Oat and Carrot Breakfast Cereal

Before you get too excited and start going “Ewwwwww, oatmeal with carrots? Has she lost her MIND?” let me tell you how tasty this cereal is. It’s low in calories, low in sodium, and has zero cholesterol. And about 3 grams of fiber per half cup serving.  So there!

Get in my belly and warm me up! Great way to start the day with this fruit juice sweetened oatmeal.
What You Need
  • ¾ cup rolled oats
  • ½ cup water
  • 1½ cups apple juice
  • ¼ cup grated carrot
  • ¼ cup raisins
  • ¼ tsp ground nutmeg
How to Do It
  1. Cook oats and raisins in hot water and apple juice.
  2. When done, stir in raw carrots. Mix well to distribute evenly throughout oatmeal.
  3. Serve warm with plant based milk of choice.
