Yana’s Quinoa Salad
- 1 cup of cooked Quinoa
- 1 large tomato
- ½ of a purple onion
- ½ of one cucumber
- 1-1/2 cups of purple cabbage
- 2-3 Tablespoons of your favorite vinaigrette dressing
- Cook quinoa as you normally would (see NOTES below for info)
- Chop tomato, onion, cucumber and cabbage into small chunks.
- Toss vegetables with cooked quinoa and vinaigrette dressing.
- Cover bowl and chill for at least 30 minutes before serving.
