Yana submitted her quinoa salad recipe to share with you, which she describes as "a fresh and tasty side dish." I don't know about you, but I love these recipes with just a couple of ingredients. Thanks Yana!

What You Need
  • 1 cup of cooked Quinoa
  • 1 large tomato
  • ½ of a purple onion
  • ½ of one cucumber
  • 1-1/2 cups of purple cabbage
  • 2-3 Tablespoons of your favorite vinaigrette dressing
How to Do It
  1. Cook quinoa as you normally would (see NOTES below for info)
  2. Chop tomato, onion, cucumber and cabbage into small chunks.
  3. Toss vegetables with cooked quinoa and vinaigrette dressing.
  4. Cover bowl and chill for at least 30 minutes before serving.
Extras
To cook quinoa rinse well in fine mesh strainer. Add ½ cup quinoa and ¼ tsp Kosher salt to 1 cup of boiling water or broth. Cover and cook over low heat for about 20 minutes until all water is absorbed.
