Current eating patterns: Eat meat, drink coffee, tear up some wine, eat eggs. Prone to skip meals.
Why you signed up for the 21-day Vegan Kickstart? I feel bloated and experience inflammation and fluid retention. I want to get control of my health before it spirals out of control.
What you anticipate will be your three biggest challenges to staying on track?
#1 Eating regular meals. I skip breakfast and lunch a lot.
#2 My food allergies. Soy and wheat are not my friends.
#3 Laziness. It’s easier to throw some chicken on the grill vs. create a vegan dish.
How you plan to conquer those challenges? Not sure yet. Giving that some thought over the next two weeks before the kickstart challenge begins.
I’ve actually been doing very well thank you! With the two weeks I did before the kickstart began, plus the first week of the official program behind me, I’m now in my fourth week of vegan eating and loving it. I am eating a far wider variety of food than I have in years. Loving the colors, tastes, textures and smells of new dishes. Testing, modifying and even creating recipes has been fulfilling my creative side while I nourish my body. Not losing any weight, but I think that with my determination to start logging my food intake, that should turn things around. Looking forward to trying more new recipes and posting them on the blog for you to try as well.

Signed up because I really need to clean out my body and a vegan diet is good place to start.
My three biggest challenge will be the inconvenience of eating a vegan diet.
I’ll need to really plan my meals in advance in order at vegan for 21 days.
Well, folks, it’s been about two weeks since I started eating vegan. I have to admit it was quite challenging at first, mostly because I’m not used to really thinking about what I’m going to eat. Also, not only did I want to eat vegan, I also wanted to eat healthy. That meant I had to eat as raw as possible, give up late night eating, give up alcohol, and, most importantly, give up my go-to snacks and fillers like bread, chips, french fries, nachos, etc.
So basically for the first week and a half, I pretty much lived on trail mix, grapefruit juice, and apples! During that second week, though, I decided to go grocery shopping. Picked up some broccoli, green onions, spring salad mix, tomatoes, alfalfa sprouts, heart of palm, garbanzos, kidney beans, black eye peas, black beans, cucumbers, a yellow onion, oranges, strawberries, bell peppers, bananas, quinoa, and avocados.
So, for the last 4 or 5 days, I’ve been eating fruit for breakfast and salads (salad greens, green onions, broccoli, tomatoes, sprouts, sunflower seeds, and beans prepared in advance in mason jars) for lunch. Also, I made some vegetarian black beans and cooked up the quinoa with onions and vegetable broth; that’s been my dinners, sometimes with topped with steamed broccoli and sometimes with avocado.
My snacks have consisted of fruit (apples, oranges, bananas, strawberries), raw bell pepper strips, and of course, trail mix! Haven’t been hungry and really haven’t had a craving for meat or junk food. Haven’t weighed myself yet (starting weight was 172), so not sure if I’ve lost any pounds, but I definitely feel better and I have more energy. Anyway, just wanted to update you.
Curious to know how other folks are doing. Check back in a few days for another update.

My meals yesterday:
Breakfast: Strawberries and bananas
Lunch: Spinach salad with avocado, red onions, and olive oil and vinegar
Dinner: Quinoa with onions and raisins, avocado, cucumber, and tomatoes
Snacks: sliced bell pepper strips, apples, and oranges
The best thing about eating vegan is that I can eat as much as I want and I can eat all day, so I’m never hungry.
Question: What leafy greens are best eaten raw? And combined with what other foods?

Current eating patterns : I eat little to no meat (turkey bacon once a week, canned tuna a couple times a month, no chicken, no pork, no beef). My stomach has let me know in the past couple months that it does not like eggs and most animal dairy products (eggs, ice cream, cheese). I am have been doing quite well with no pasta, rice and bread. I am working on lower my intake of vegetable starches (potatoes, corn, etc).
Why you signed up for the 21-day Vegan Kickstart Challenge: To make myself accountable. I have asthma and a small heart condition, pre-menopausal
What you anticipate will be your three biggest challenges to staying on track: My Sunday morning turkey bacon sandwiches.
How you plan to conquer those challenges: exercise, meditation and staying focused on moving forward to a healthier body.

Why you signed up for the 21-day Vegan Kickstart Challenge: I want to get healthy!! My blood pressure has suddenly become an issue for the first time in my life and I am heavier than I have ever been as well.
What you anticipate will be your three biggest challenges to staying on track: Eating on the go and learning to fight temptation when with others.
How you plan to conquer those challenges: Preplan and prepare meals ahead of time, bring food with me.
Any other information that you wish to share to help us know you better: My goal is to become at least 50% Raw Vegan..my favorite restaurant is Tassilli’s Raw Reality her in ATL. Love it there!!
I can’t believe how easy this is! Pinterest has been my resource for vegan recipes. The presentation pictures look so mouth watering. I made the chickpea salad, I admit I used mayonnaise, and it was so yummy! I am not hungry all the time which is a major plus. Also, this challenge encouraged me to cook more and think outside the box!
